BBQ Chicken {Electric Pressure Cooker recipe}

BBQ chicken cooked first in the pressure cooker {i.e. Instant Pot} and finished off under the broiler in 40 minutes. This BBQ chicken is soft, juicy, and packed with flavor.

Ingredients

  • 2 ½ to 3 pounds chicken thighs bone-in
  • salt & pepper to taste
  • ½ cup water
  • ½ cup BBQ sauce see note

Instructions

  1. Peel off skin and trim fat from chicken thighs. Season both sides generously with salt and pepper.

  2. Put small trivet in bottom of electric pressure cooker (i.e. Instant Pot) and pour in ½ cup water. Add the seasoned chicken thighs to top of trivet and close and lock lid in place.

  3. Cook chicken for 10 minutes on high pressure and then let the pressure release naturally (should take about 10 minutes). 

  4. Preheat the broiler. When pressure has release, carefully open the lid and place chicken (ugly side up) on broiler pan. Spread a generous layer of BBQ sauce over chicken. 

  5. Adjust oven rack so that chicken on broiler pan will be about 6-inches from broiler. Broil chicken (leaving broiler door open to watch it) for 2-3 minutes or until BBQ sauce is glazed. 

  6. Remove pan from oven and carefully flip chicken with a pair of kitchen tongs. Spread this side of chicken with BBQ sauce and broil for an additional 2-3 minutes or until BBQ sauce is glazed.

  7. Serve chicken with additional BBQ sauce, if desired.

Recipe Notes

1. For the BBQ Sauce any BBQ sauce you like will work. I use either a homemade sauce (recipe still to come) or we also like Sweet Baby Rays.

2. You can probably adapt this recipe to work for chicken legs or breasts, but we really like it using thighs. You will probably need to add cook time in the pressure cooker for breasts and use less cook time for legs.

3. If you are wanting to make this recipe ahead of time follow the recipe in steps 1-3. Then let the chicken keep warm in the pressure cooker until ready to eat. Then 5 minutes before eating, spread with BBQ sauce and glaze both sides under the broiler as recipe directs.
