Country-Style Pork Ribs with Spicy Barbecue Sauce {Electric Pressure Cooker Recipe}

Tender country-style pork ribs with spicy barbecue sauce cooked in an electric pressure cooker. This flavor-packed dish is a huge family favorite that we love to serve again and again.

Ingredients

For Barbecue Sauce:

  • cup butter
  • ¼ cup white vinegar
  • ¼ cup water
  • 2 teaspoon granulated sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • dash cayenne pepper + more to taste, optional

For Ribs:

  • 3 ½ to 4 pounds boneless country-style pork ribs
  • 1 teaspoon coarse salt
  • 1 teaspoon black pepper
  • 2 tablespoons canola oil

For Thickening:

  • 2 ½ tablespoons cornstarch
  • 3 tablespoon cold water

Instructions

  1. Prepare barbecue sauce in a small saucepan by combining butter, white vinegar, water, granulated sugar, garlic powder, and onion powder. Heat over medium heat until butter is melted. 

  2. Select Browning on the Electric Pressure Cooker and heat canola oil until sizzles. Season pork ribs on all sides with coarse salt and black pepper.

  3. Lightly brown the seasoned ribs on all sides. Do this step in batches so you don't overcrowd the pot, placing the ribs on a plate after they brown.

  4. Return ribs to pressure cooker. Pour sauce over ribs and give them a stir to coat them with the sauce.

  5. Lock the lid in place. Select High Pressure and set the time for 40 minutes cooking time. When the beep sounds, let the pressure natural release for 10 minutes (see note), then release any remaining pressure. When the valve drops, remove the lid.

  6. With tongs, remove the ribs from the pressure cooker to a platter and cover with foil to keep warm.

  7. In a small bowl, combine the cornstarch and water, whisking until the cornstarch dissolves. Select Saute on the pressure cooker and bring the sauce to a boil. Whisk in the cornstarch slurry and cook, stirring constantly until the mixture thickens.

  8. Add the ribs, stir to cover them in the sauce and simmer for 5-10 minutes to let the ribs absorb some of the sauce, stirring occasionally. Serve immediately or keep warm for up to 8 hours by locking lid in place and selecting Keep Warm on Electric Pressure Cooker.

Recipe Notes

1. You can make the barbecue sauce spicier by adding more cayenne. I usually leave it off for my kiddos (or just add a little) because they don't appreciate spicy foods.

2. You can also let the pressure release naturally all the way instead of doing a quick pressure release after 10 minutes.

3. My favorite way to serve these ribs is with potatoes. The barbecue sauce they cook turns into a delicious gravy and that goes well with potatoes. But you can also serve them with rice or noodles.
