Marshmallow Popcorn

Soft, gooey, decadent and delicious this caramel-flavored marshmallow popcorn is hard to resist.

Ingredients

  • 2 cubes (1 cup) butter
  • 1 cup (7.5 ounces) brown sugar
  • 33 (7.7 ounces) large marshmallows see note
  • 1 teaspoon vanilla
  • 5 quarts popped popcorn about ¾ cup popcorn kernels, popped, see note

Instructions

  1. In a large saucepan combine the butter, brown sugar and marshmallows. Cook over medium heat, stirring often until mixture is melted and comes together in a sticky syrup.
  2. Pour the mixture over a large bowl of popped popcorn and mix to combine.

Recipe Notes

1. You can also use 7.7 ounces of mini marshmallows.

2. For the popped popcorn, my favorite to use is this coconut oil popcorn. If you are using air popped popcorn, you may want to add ½ teaspoon salt to the syrup before pouring over the popcorn to give it just a little more flavor. In a pinch you can also pop 2 to 3 regular sized bags of microwave popcorn to use in this recipe. With any method, make sure you meticulously remove all of the unpopped popcorn kernels so that no one breaks a tooth.
