Tender country-style pork ribs with spicy barbecue sauce cooked in an electric pressure cooker. This flavor-packed dish is a huge family favorite that we love to serve again and again.
Jump to RecipeHello Hello.
I’ve been working on perfecting this recipe for the electric pressure cooker for several months. We’ve made a variation of this dish for years in an oven. But with a cook time of 2 1/2 hours in the oven, it’s a bit daunting. And it gets saved for special occasions only.
But making it in the electric pressure cooker cuts the time in half. That’s one of the reasons I love an electric pressure cooker so much. It really shines with dishes like these. And who wants to heat up the oven for 2 1/2 hours (especially in the summer) even for good ribs. Thank goodness for the electric pressure cooker.
And oh my, seriously these ribs are so good.
They are soft and tender and packed with flavor. I hesitated to call them spicy because sometimes when people think of spicy they think of hot. But that’s not necessarily the case here. Spicy is more referring to the fact that there’s a lot of flavor. Since I cook family friendly, I usually don’t add much “hotness” to this dish at all, but you can always add more by upping the cayenne seasoning.
The barbecue sauce these ribs are cooked in is not your traditional tomato based barbecue sauce. It’s got a delicious buttery flavor. When you taste it plain (or smell it) the vinegar stands out, but trust me with the ribs it all turns into a delicious combo that is so good. I love how cooking it in the pressure cooker turns the sauce into a lovely gravy that is so gorgeously delicious on the ribs and with potatoes. Oh my. You can also serve these ribs with rice or noodles, but potatoes are by far my favorite.
Another great thing about cooking these ribs in the electric pressure cooker is that they can be made ahead of time and the keep warm function allows you to serve them several hours later. Seriously how awesome is that? In the summertime especially I love making dinner in the morning before we go off on our adventures. It’s so nice to come home to a hot, delicious dinner waiting and ready to go in the electric pressure cooker when everyone is starving.
Okay speaking of adventures. I’m off on one today with three kiddos in tow (including a teenager and newly potty trained little one). Wish me luck. It’s sure to be an adventure. Hope you’re having a great summer!
Country-Style Pork Ribs with Spicy Barbecue Sauce {Electric Pressure Cooker Recipe}
Tender country-style pork ribs with spicy barbecue sauce cooked in an electric pressure cooker. This flavor-packed dish is a huge family favorite that we love to serve again and again.
Ingredients
For Barbecue Sauce:
- ⅔ cup butter
- ¼ cup white vinegar
- ¼ cup water
- 2 teaspoon granulated sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- dash cayenne pepper + more to taste, optional
For Ribs:
- 3 ½ to 4 pounds boneless country-style pork ribs
- 1 teaspoon coarse salt
- 1 teaspoon black pepper
- 2 tablespoons canola oil
For Thickening:
- 2 ½ tablespoons cornstarch
- 3 tablespoon cold water
Instructions
-
Prepare barbecue sauce in a small saucepan by combining butter, white vinegar, water, granulated sugar, garlic powder, and onion powder. Heat over medium heat until butter is melted.
-
Select Browning on the Electric Pressure Cooker and heat canola oil until sizzles. Season pork ribs on all sides with coarse salt and black pepper.
-
Lightly brown the seasoned ribs on all sides. Do this step in batches so you don’t overcrowd the pot, placing the ribs on a plate after they brown.
-
Return ribs to pressure cooker. Pour sauce over ribs and give them a stir to coat them with the sauce.
-
Lock the lid in place. Select High Pressure and set the time for 40 minutes cooking time. When the beep sounds, let the pressure natural release for 10 minutes (see note), then release any remaining pressure. When the valve drops, remove the lid.
-
With tongs, remove the ribs from the pressure cooker to a platter and cover with foil to keep warm.
-
In a small bowl, combine the cornstarch and water, whisking until the cornstarch dissolves. Select Saute on the pressure cooker and bring the sauce to a boil. Whisk in the cornstarch slurry and cook, stirring constantly until the mixture thickens.
-
Add the ribs, stir to cover them in the sauce and simmer for 5-10 minutes to let the ribs absorb some of the sauce, stirring occasionally. Serve immediately or keep warm for up to 8 hours by locking lid in place and selecting Keep Warm on Electric Pressure Cooker.
Recipe Notes
1. You can make the barbecue sauce spicier by adding more cayenne. I usually leave it off for my kiddos (or just add a little) because they don’t appreciate spicy foods.
2. You can also let the pressure release naturally all the way instead of doing a quick pressure release after 10 minutes.
3. My favorite way to serve these ribs is with potatoes. The barbecue sauce they cook turns into a delicious gravy and that goes well with potatoes. But you can also serve them with rice or noodles.
