I hope you’re out enjoying yourselves today. We’ve had a great weekend. All of my siblings have been in town and it’s been fun getting together for good food and good times with all of the cousins and grandparents.
The boys have had a blast reeling out catfish from Utah Lake like crazy with their Dad and Uncles. And we had a fish fry on Saturday with the tasty fish. Yum.
Since I had a few minutes while my little one is napping I decided to quickly hop on here and post this delicious strawberry sherbet recipe that we love.
But before I do I have to post my favorite joke (’cause it kind of relates).
What did Ernie say to Bert when Bert asked him to pass the ice cream?

Now I’m moving on to the sherbet.
And let’s just get right to the point.
This sherbet is delicious.
A delectable cool treat that is perfect for spring or summer when fresh strawberries are in season. I love that it’s made with fresh strawberries and sweetened with honey. Totally my kind of treat.
When I first made this recipe I actually made two different frozen strawberry treats with fresh strawberries and this one totally won hands down. Everyone loved the flavor, especially the nice little tang from the lemon juice.
And I was surprised at how creamy this strawberry sherbet was even though there is no cream in the recipe.
Okay before I go I need to tell you my own secret love that I discovered. Did you know that strawberry ice cream or sherbet is even more delicious when you eat it with peanut butter filled pretzels? I’m not talking mixed in (although as I’m writing this my mind is wondering how that would taste). I usually just kind of take a bite of each once and a while. And oh my. They were made for each other. The salty with the sweet. Seriously. Give it a try. So good.

Fresh Strawberry Sherbet {Honey-Sweetened}
This fresh strawberry sherbet is cool and refreshing, an absolutely delightful frozen confection. Made with fresh strawberries and sweetened with honey, this strawberry sherbet is still creamy like ice cream, but with a delicious sherbet-like tang. Love. Love. Love.
Ingredients
- 3 cups (15 ounces) chopped fresh strawberries
- ½ cup (6 ounces) raw honey see note
- ½ cup buttermilk
- 1 tablespoon fresh lemon juice
Instructions

Combine chopped fresh strawberries, raw honey, buttermilk, and lemon juice in blender and blend until smooth. Pour into medium container with lid and chill in the refrigerator for 1 hour or up to 24 hours.

Process ice cream in ice cream maker following the manufacturer’s instructions. Scrape mixture into a container with a lid. Freeze ice cream for at least 2 hours before serving or up to a week.
Recipe Notes
1. I use raw honey in this recipe. If you use regular honey from the store keep in mind that it is not always the same. Often honey from the store has been watered down or mixed with corn syrup so it turns out different.
2. I’ve only made this with fresh lemon juice (from a freshly squeezed lemon) and that is exactly what I recommend!
