Since I’m all about giving you options (you know, being the generous person that I am), today I’m sharing a decadent delicious popcorn treat that is one of my favorites during the holidays. With butter and sugar and marshmallows.
Yum.
This marshmallow popcorn is the perfect holiday indulgence to give away or snack on yourself.
It comes together in just minutes and is absolutely delicious.
It’s one of those treats that somehow carries magical disappearing properties because it’s there one second and gone the next. And no one knows exactly where it went. But oh boy it sure tastes good.
I adapted this recipe from the marshmallow popcorn that a dear little neighbor dropped by around Christmas one year, sweet Myrna J. When she first brought it over I thought, oh another caramel popcorn –Ho hum. But then I tasted a bite.
And I couldn’t stop. It was just so good. This is not your typical break-a-tooth caramel popcorn that I really don’t care for. It’s soft and gooey with a sweet buttery caramel flavor.
When I got the recipe from her I couldn’t believe how easy it was. Just whip a few ingredients together and ta da! Snacking heaven.

Marshmallow Popcorn
Soft, gooey, decadent and delicious this caramel-flavored marshmallow popcorn is hard to resist.
Ingredients
- 2 cubes (1 cup) butter
- 1 cup (7.5 ounces) brown sugar
- 33 (7.7 ounces) large marshmallows see note
- 1 teaspoon vanilla
- 5 quarts popped popcorn about ¾ cup popcorn kernels, popped, see note
Instructions

In a large saucepan combine the butter, brown sugar and marshmallows. Cook over medium heat, stirring often until mixture is melted and comes together in a sticky syrup.

Pour the mixture over a large bowl of popped popcorn and mix to combine.
Recipe Notes
1. You can also use 7.7 ounces of mini marshmallows.
2. For the popped popcorn, my favorite to use is this coconut oil popcorn. If you are using air popped popcorn, you may want to add ½ teaspoon salt to the syrup before pouring over the popcorn to give it just a little more flavor. In a pinch you can also pop 2 to 3 regular sized bags of microwave popcorn to use in this recipe. With any method, make sure you meticulously remove all of the unpopped popcorn kernels so that no one breaks a tooth.
