Hello, my friends!

I am typing this from my backyard. The weather is perfect, everything is in bloom, and I am in heaven.

There’s just something so wonderful about a beautiful spring day.

I’m excited to tell you about this delicious spinach strawberry salad with apple cider vinaigrette.

It’s one of my favorite salads in the spring because it’s a good time to find ripe, delicious strawberries. The strawberries really make the salad so make sure you are using ripe ones (vine-ripened are the best).

And let me just talk about the apple cider vinaigrette.

It is drinkable good. Sweetened with honey, this dressing packs a bold flavor. You’ll want to make sure you allow time for the flavors to blend at room temperature– about 20 to 30 minutes after blending. It really makes a difference.

It’s easy to make the vinaigrette ahead of time so the salad comes together even quicker. I use raw honey and Bragg’s Raw Apple Cider Vinegar (aff. link). Love that stuff.

There’s no reason to complicate this salad, but sometimes I like to dress it up for lunch or a main dish meal. I love added shredded grilled or rotisserie chicken, avocados and some toasted nuts. If you’re a cheese lover like me, a little feta or parmesan kicks it up another whole notch sending it to the unforgettable level.

Spinach Strawberry Salad with Apple Cider Vinaigrette

Ingredients

Dressing:

  • ¼ cup avocado oil
  • 2 tablespoons raw apple cider vinegar see note
  • ¼ cup raw honey
  • ¾ teaspoon dried minced onion
  • splash worcestershire sauce
  • teaspoon paprika

Salad:

  • 5 ounces fresh baby spinach rinsed and dried
  • 2 cups sliced fresh strawberries
  • ¼ cup thin red onion slices
  • 2 tablespoons sesame seeds
  • 1 tablespoon poppy seeds

Instructions

  1. Make dressing by combining dressing ingredients in a blender jar. Blend until thoroughly combined. Let sit at room temperature for 20-30 minutes to blend flavors. 

  2. Meanwhile prepare the salad by layering spinach, onion slices, strawberries, sesame seeds, and poppy seeds in a large serving bowl. 

  3. Just before serving, pour dressing over the salad and toss until lightly coated. Or serve dressing on the side.

Recipe Notes

1. I use Bragg’s Apple Cider Vinegar (aff. link) in this recipe.

2. This salad is purposefully simple and super delicious in its simplicity. But if you want to kick it up a notch try adding some nuts (slivered or sliced toasted almonds or walnuts), chopped cooked chicken (like rotisserie style), diced avocados, and/or feta or other cheese.

2. The dressing can be made up to 3 days in advance. Store in the refrigerator after making and then 20-30 minutes before serving allow the dressing to come to room temperature.

3. For a single serving: I often layer the ingredients on a plate sprinkling on the seeds on top. The salad can be served with the premade dressing either on the side or drizzled on top, to taste.
