Hello, my friends!

I’m excited to share these delicious sugar cookie bites with you.

Cookie bites are nothing new around here. These chocolate chip cookie bites and their peanut butter knockoff have made regular appearances in our house for snacks, parties, showers, or an easy freezable treat.

I’ve been dreaming for a while about the perfect sugar cookie bite. Soft and texture perfect like my favorite sugar cookies.

The other requirement was they needed to be deco-ratable for parties. Because cuteness. Cuteness that’s completely manageable because that’s how things roll around here. As in anyone-can-do it-because-it’s-quick-and-easy-kind-of-cuteness. No cake decorating expertise needed here.

Let me give you some options.

Super minimalistic decorators (like myself) can roll them in sugar before baking. Or roll them in colored sugar for holidays (red and green for Christmas would be fun!).

Another easy option is to throw some sprinkles into the dough while it’s mixing. Everybody can do that. And who doesn’t like sprinkles? By the way, the dough comes together super easy using a stand mixer with cookie dough paddles.

All you overachievers can pipe some cute frosting on top, if you like.

The rest of us will just smear it on with a knife cause we’re feeling lazy and need to get these sugar cookie bites into our belly’s ASAP.

These are my dream sugar cookie bites, my friends.

I love bringing cookie bites to parties because it makes a ton (hello 48 cookie bites). Have I mentioned how tasty they are?

Add some sprinkles or leave them plain. Frost them or don’t frost them. Roll them in sugar or cinnamon sugar for a snickerdoodle cookie bite variation. It really doesn’t matter which way you go because they will be delicious and absolutely irresistible every time.

Ingredients

  • 1 1/8 cup (18 tablespoons or 2 sticks + 2 tablespoons) butter, softened to room temperature
  • 1 1/4 cup (9.4 ounces) granulated sugar
  • 1/2 cup (2 ounces) powdered sugar
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 3 cups (15 ounces) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/3 cup sprinkles, optional (see note)
  • 1/4 cup granulated sugar for rolling, if desired (see note for a snickerdoodle variation)

Instructions

  1. Preheat oven to 350 degrees (or 325 degrees convection bake). Spray a nonstick 48-count mini muffin pan (or two 24-count pans) with cooking spray and set aside. 

  2. In a large mixing bowl or the bowl of a stand mixer with cookie paddle attachment, cream the softened butter and sugars together for about 3 to 4 minutes until the mixture is light and fluffy, scraping sides down as needed. Add eggs one at a time and mix well after each addition. Stir in the vanilla extract and mix.

  3. Stir in the flour, baking powder, and salt. Add the sprinkles (if using) and mix until just combined. Be careful not to overmix the dough.

  4. Divide the dough evenly between the 48-mini muffin tins. I like to use a heaping #60 mini cookie scoop for this. Roll each dough ball in granulated sugar before putting in tin, if desired (or see note for snickerdoodle bite variation).

  5. Bake cookie bites in preheated oven for 13-14 minutes or until starting to crackle on the top and slightly firm around the edges. Pull them out before they are brown on the edges or they will be overbaked and dry. Cool to room temperature then carefully remove cookie bites by slipping a plastic knife around the sides of them to pop them out.

Recipe Notes

Snickerdoodle variation: Omit the sprinkles and roll each dough ball in a mixture of 1/4 cup of sugar + 1 tablespoon ground cinnamon.
