Savory and delicious, this creamy lime coconut rice made in the electric pressure cooker (i.e. Instant Pot) or on the stovetop and goes well with so many things. It's flavorful enough to stand on its own, but mild enough not to overpower when it's served as a side. I've been making coconut rice for years and it's a huge favorite.
In the electric pressure cooker add the rice, coconut milk, water, salt, fresh lime juice, white sugar, and black pepper. Give it a good stir and lock the lid in place.
Cook on high pressure for 6 minutes. Then let the pressure release naturally for 10 minutes (or optionally you can just leave it to release naturally entirely). Then do a quick release.
Fluff rice with a fork and serve garnished with chopped green onions and sliced fresh limes, if desired.
To a medium saucepan add the rice, coconut milk, water, salt, fresh lime juice, white sugar, and black pepper. Give it a good stir and heat it over medium high heat until it comes to a simmer.
Cover pan with a lid, turn the heat down to medium just so it maintains the simmer, and let it simmer for 15-20 minutes until the rice is tender.

1. I've also made this recipe with long-grain white rice and it also works just fine, although I prefer the texture of the basmati or jasmine rice. If you want to try it with brown rice, just keep in mind that your cooking time will need to be adjusted as brown rice takes longer than white rice to cook (generally 21-23 minutes in an electric pressure cooker and even longer on the stove).
