Creamy Lime Coconut Rice {Electric Pressure Cooker or Stovetop}

Savory and delicious, this creamy lime coconut rice made in the electric pressure cooker (i.e. Instant Pot) or on the stovetop and goes well with so many things. It’s flavorful enough to stand on its own, but mild enough not to overpower when it’s served as a side. I’ve been making coconut rice for years and it’s a huge favorite.

Hello hello.

Are you feeling the pressure of the end-of-school-year-rush like I am? Oh my. Life always seems to pick up speed this time of year and it’s hard to keep up with all the rush.

Good news today because I have a fast, easy side dish that has saved many a dinner-dilemma around here. With a total cook and prep time of around 20 minutes and the ability to make-it-ahead and keep it warm until dinner (thanks to the electric pressure cooker), this creamy lime coconut rice is perfect for a quick weeknight meal.

So what if you don’t have an electric pressure cooker (i.e. Instant Pot)?

No problem. It may take a few minutes longer, but it’s still fairly quick to make it on the stovetop and I’ve included those instructions for you as well.

What to serve with this creamy lime coconut rice

One of my favorite things to serve with this creamy lime coconut rice are these blackened fish tacos. Or how about this chicken massaman curry? Totally delicious. And those shredded beef baked taquitos I posted last week? Yes another great option. Also these crispy chicken tacos would work well too. As you can see, there are so many options.

I love to serve this rice with pineapple salsa. I usually serve both with a grilled or broiled fish, but you could also use the fish from the blackened fish tacos.

Let’s talk about the flavors for a minute. The lime flavor is very subtle. It’s there more to balance the coconut flavor than to stand out on it’s own. I experimented a bit with making the lime flavor stronger and I found that if any stronger, the lime tends to overpower. The coconut flavor is fairly mild also. The coconut milk adds that delicious creaminess to the rice that is fabulous.

Anyway you look at it, this creamy coconut lime rice is sure to become part of the repertoire of your favorite side dishes. I know it has for me.

Creamy Lime Coconut Rice {Electric Pressure Cooker Recipe}

Ingredients

  • 2 cups white basmati or jasmine rice see note
  • 1 14-ounce can full-fat coconut milk
  • 2 cups water
  • 1 ½ teaspoons salt
  • 1 tablespoon fresh lime juice
  • 1 ½ tablespoons white sugar
  • ½ teaspoon black pepper
  • chopped green onions, sliced fresh limes for garnish optional

Instructions

Pressure Cooker Method:

  1. In the electric pressure cooker add the rice, coconut milk, water, salt, fresh lime juice, white sugar, and black pepper. Give it a good stir and lock the lid in place. 

  2. Cook on high pressure for 6 minutes. Then let the pressure release naturally for 10 minutes (or optionally you can just leave it to release naturally entirely). Then do a quick release. 

  3. Fluff rice with a fork and serve garnished with chopped green onions and sliced fresh limes, if desired.

Stovetop Method:

  1. To a medium saucepan add the rice, coconut milk, water, salt, fresh lime juice, white sugar, and black pepper. Give it a good stir and heat it over medium high heat until it comes to a simmer. 

  2. Cover pan with a lid, turn the heat down to medium just so it maintains the simmer, and let it simmer for 15-20 minutes until the rice is tender.

  3. Fluff rice with a fork and serve garnished with chopped green onions and sliced fresh limes, if desired.

Recipe Notes

1. I’ve also made this recipe with long-grain white rice and it also works just fine, although I prefer the texture of the basmati or jasmine rice. If you want to try it with brown rice, just keep in mind that your cooking time will need to be adjusted as brown rice takes longer than white rice to cook (generally 21-23 minutes in an electric pressure cooker and even longer on the stove).
