Hello friends!

Today I’ve got a fast, simple, and healthy summer dish that is delicious. Just twenty minutes from start to finish, this easy grilled or broiled tilapia is just the thing for the crazy summer nights.

Speaking of crazy is anyone else experiencing the craziness of summer right now? Wow. I seriously hope I survive the next three months with all my mental faculties intact. That is my goal, my friends. That is my goal.

But if anything can save my sanity, quick and easy dinners are sure to be of help. With all the comings and goings and crazy schedules with the kiddos home, it’s always nice to have a quick 20-minute healthy meal with very little thought or preparation involved. Just throw some fish on a plate and add a little oil and seasonings. And THAT IS IT for the prep!

AND then if you have a grill there’s no need to even heat up the house.

Just grill away.

But…if you don’t have a grill, you can also cook this tilapia under the broiler.

What to serve with this tilapia

And now before I skip off to deal with my summer chaos (wish me luck), I just have to make things really easy for you with a few meal ideas to serve with this tilapia.

  1. First off this tilapia is delicious served over this yummy coconut rice. Add another dimension of deliciousness by serving this fresh pineapple salsa on top. Yum!
  2. Your second option is much simpler (and if we’re talking summer let’s be honest, this may be slightly more enticing to folks dealing with chaos like me). Just serve the fish with a batch of these delicious garlic butter satueed carrots and some very basic rice or quinoa (cooked in chicken broth if you want a bit more flavor) and there you go.

Simple, delicious and no need to heat up the house with either of those options. HURRAY!

Ingredients

  • 3 4-ounce tilapia fillets unthawed if frozen, see note
  • 1-2 tablespoon avocado or canola oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Place tilapia on plate and pat dry with paper towels. Rub 1 to 2 tablespoons of oil over both sides until coated.

  2. Combine the garlic powder, onion powder, thyme, oregano, salt and pepper together in a small bowl. Rub evenly over both sides of tilapia fillets.

For Grill:

  1. Preheat grill to medium or medium-high. Taking a little oil, rub over the grill grates so fish won’t stick. Grill fish for 5-8 minutes per side or until fish flakes easily with a fork.

For Broiler:

  1. Preheat broiler to high. Adjust rack so fish will be about 4 to 5 inches from the broiler. Cover a broiler pan with foil and spray with cooking spray. Place tilapia on foil and broil for about 5-6 minutes on first side. Then remove and flip fish and broil for another 4 to 5 minutes on second side or until fish flakes easily with a fork.

Recipe Notes

1. Nothing works better than fresh tilapia, but if you do need to go with frozen, I really like the individually frozen tilapia loins from Costco.

2. This tilapia is delicious served over this yummy coconut rice. Add another dimension of deliciousness by serving this fresh pineapple salsa on top. Yum! Another great option is to serve it alongside a batch of these delicious garlic butter satueed carrots and some very basic rice or quinoa (cooked in chicken broth if you want a bit more flavor). Simple, healthy and tasty.
