Pineapple Salsa

It’s pineapple salsa today, my friends.

Oh boy.

You won’t believe how delicious it is.

I have to admit that a few years ago the thought of pairing anything sweet like pineapple with savory things like peppers and onions seemed a bit of a stretch to my tender palate.

But oh my I had no idea what I was missing. 

The combo of sweet and savory flavors in this fresh pineapple salsa is so delicious.

The hotness level in this salsa is just right for my tastes (super mild) but if you prefer it hotter, just add more jalapenos.

This pineapple salsa is super easy to make and I love that it uses fresh ingredients. I like to chop the fresh pineapple very fine so I make sure I get lots of variety in every bite. Here’s a visual.

Along with the finely chopped pineapple I like the peppers, onions and cilantro finely chopped as well. Who wants to get a bite of just a huge pepper? No my friends, finely chopping is totally the way to go.

Pineapple Salsa

Don’t substitute for the freshly squeezed lime juice. You will regret it. The brightness of flavor of fresh lime really just makes this salsa shine out.

It’s is best served the same day, but you can make it a few hours ahead of time. The leftovers will keep in the refrigerator for a few days but you may need to drain off the excess liquid that tends to pool at the bottom before serving it.

I love to serve this pineapple salsa on fish tacos. Specifically these blackened fish tacos which are seriously one of my favorite foods in the whole world. I think spicy flavored fish and pineapple salsa were a match made in heaven.

You can also serve it plain with just chips as an appetizer and everyone will rave. Who knew such yumminess even existed?

Ingredients

  • 1 ½ cups finely chopped fresh pineapple see note
  • ½ cup finely chopped red bell pepper
  • ½ jalapeno finely chopped
  • 2 tablespoons finely chopped cilantro
  • 2 tablespoons finely chopped green onions
  • 1 tablespoon freshly squeezed lime juice
  • ½ teaspoon coarse salt

Instructions

  1. Combine all ingredients in a medium bowl and mix together well. Serve as an appetizer with chips or as a topping for a Mexican inspired dish (see note). Best served the same day (see note). 

Recipe Notes

1. I like the pineapple and veggies chopped very finely in this recipe. I think it adds to the flavor to have lots of variety in each bite. 

2. You can also use mild purple onions in this recipe (I like the small purple pearled onions because they have a milder flavor).

3. This salsa is best the same day, but it will keep in the refrigerator for a day or two in a sealed container. If excess liquid starts to pool, just drain it off before serving.
