Combine all ingredients in a medium bowl and mix together well. Serve as an appetizer with chips or as a topping for a Mexican inspired dish (see note). Best served the same day (see note).
1. I like the pineapple and veggies chopped very finely in this recipe. I think it adds to the flavor to have lots of variety in each bite.
2. You can also use mild purple onions in this recipe (I like the small purple pearled onions because they have a milder flavor).
3. This salsa is best the same day, but it will keep in the refrigerator for a day or two in a sealed container. If excess liquid starts to pool, just drain it off before serving.
