Okay confession time.  I am super picky about how I eat my cooked vegetables.

I know a lot of people who can gag them down in their plain, boring state straight from the microwaveable steam bag they came in, but I must admit that in most cases I cannot. There are a few exceptions but cooked carrots have never been and will never be on that list.

In fact, I used to claim quite boldly that I did not like cooked carrots. Turns out I don’t like steamed or boiled cooked carrots without any flavor.

Hey, even cooked vegetables deserve a little love, right?

But with this recipe in hand I can now boldly claim that I love cooked carrots. And sautéeing or roasting (you met them roasted in this recipe I posted) is totally the way to go as far as carrots are concerned. Those methods of cooking bring out the true carrot flavors instead of blanching them into taste oblivion.

I’ve actually made this recipe with carrots cut into various shapes and you can always feel free to change that up, but this is by far my favorite shape. They cook much more evenly and I think look better on the plate this way too.

The parsley garnish is more for looks. So if your kids have a problem with weird green things in their food, feel free to leave it off.

Also I like the flavor when these carrots are roasty toasty and just a little caramelized and lightly blackened but again some kids will not go for this at all.  Any variation in color and they call them burnt and won’t touch them. If this is the case with your kids, you may want to cook them at a bit lower temperature so they don’t blackened as fast and stay a bit more even colored.

But I have to say, the roasty flavor is so yummy.

Ingredients

  • 1 pound carrots about 6 to 8 large
  • 2 tablespoons butter
  • 2 cloves garlic
  • ¼ teaspoon coarse salt
  • pinch black pepper
  • 2 teaspoons chopped fresh parsley for garnish

Instructions

  1. Wash and peel the carrots and slice them through the thickness into fourths. Cut them lengthwise into 2 to 3-inch pieces.

  2. In a medium skillet, melt the butter over medium to medium-high heat. Add garlic, carrots, salt, and pepper and sautée. Watch the carrots closely and turn them often. Cook for about 10-15 minutes or until carrots become tender and slightly caramelized (see note).

  3. Remove from heat and stir in freshly chopped parsley. Serve carrots warm or at room temperature.

Recipe Notes

1. My favorite way to eat these carrots is when they are very tender and just lightly blackened.

    Cooked carrots are not a favorite at my house but my husband loves these carrots! I have served them twice in the last month which is just unheard of! We really like them lightly blackened. Thanks for posting this recipe.
