Fresh Strawberry Slushies or Popsicles {Honey-Sweetened}

Fresh strawberry slushies are a favorite family treat in the summertime. With all fresh ingredients and sweetened with honey they not only taste delicious but are good for you too. We love to make them into popsicles for a fun snack on a hot day.

Hello Hello.

In the middle of writing this post my oven got installed! Hurray. I’m so excited. Two weeks without an oven led to some pretty creative cooking especially since we had to unplug the entire oven and didn’t even have the use of the burners.

Thank goodness for my electric pressure cooker, which saved dinner on so many occasions. Of course we had a microwave to warm stuff up. And we happen to have an outdoor grill for grilling and it has with a side burner that I could heat up water. Thanks to all that we still managed to cook at home during the process and some of the food was pretty tasty.

I discovered that yes, chocolate chip cookies can be cooked in a waffle iron if you’re desperate (I gotta have my chocolate, ya know).  But the trouble is getting them out of the waffle iron after they’ve cooked cause they’re rather delicate little things. But when you’re desperate, you’re desperate and you don’t really care if the cookies are a crumbled up mess when all is said and done. You eat them anyways and enjoy every bite.

But today is all about these fresh strawberry slushies and no you do not need any kind of oven to make them (thank goodness).

These strawberry slushies are the best

I discovered these strawberry slushies a few years ago and I’ve been making them like crazy ever since. They are one of our favorite treats to make this time of year when strawberries go on sale.

We love to freeze them in popsicle molds for a nice cool treat that’s so refreshing for those hot, summer days.

Strawberry Slushie Popsicles

If you don’t have popsicle molds, plastic cups with popsicle sticks work great too. I like to use the 4-ounce portion cups with plastic lids (aff. link) like for on-the-go salad dressings.

The fresh lemon juice is a very important ingredient. I’ve made them a few times with lemon juice that’s been pre-squeezed or frozen and believe me, it’s just not the same. The fresh lemon juice gives just that little tang to the slushies that takes them from good to great.

And sweetened with just honey? Yep that’s right! You can also use agave, which we do sometimes. But keep in mind that with the agave you may have to use slightly more to get it to the right sweetness.

Oh my friends, you gotta try this recipe. These are so good.

Strawberry Slushie Popsicles

Fresh Strawberry Slushies

With all fresh ingredients and sweetened with honey, these fresh strawberries slushies (or popsicles) are delicious and healthy.

Ingredients

  • 15 medium/large strawberries (10 ounces) washed with stems removed
  • 1 ½ tablespoons fresh lemon juice from 1/2 lemon
  • 3 tablespoons (2.5 ounces) raw honey
  • 20 large ice cubes about 2 cups

Instructions

  1. In a blender jar combine the strawberries, fresh lemon juice and honey and blend until smooth and honey is dissolved.

  2. Add ice cubes and blend until pureed. Add more ice, as desired to reach a slushie consistency. Taste and add more honey, if needed. Serve immediately or freeze into popsicles (see note).

Recipe Notes

1. I’ve also made this recipe with agave in place of the honey. Agave has the benefit of dissolving a little easier than raw honey. You may need to use slightly more agave than honey to get it sweet enough.

2. The fresh lemon juice is a very important ingredient. I’ve made them a few times with lemon juice that’s been pre-squeezed or frozen and believe me, it’s just not the same.

3. I like to freeze these slushies into popsicle molds. If you don’t have popsicle molds, plastic cups with popsicle sticks work great too. I like to use the kind with plastic lids like for on-the-go salad dressings.
