Ingredients

Baked Sweet Potato Fries:

  • 3 medium sweet potatoes (about 1 1/2 pounds)
  • 2 tablespoons canola or avocado oil
  • 1 teaspoon salt

Easy Fry Sauce:

  • 1/3 cup mayo (see note)
  • 1 tablespoon barbecue sauce (see note)

Instructions

  1. Place rack in center of the oven. Preheat oven to 450 degrees F. Line baking sheet with parchment paper and set aside.

  2. Peel and cut sweet potatoes in half and cut each half in 3 or 4 spears (or 6 to 8 wedges per potato) and place in a large bowl. Add oil and sprinkle salt over potatoes and toss to coat evenly.

  3. Place sweet potato wedges evenly on prepared baking sheet in a single layer so they do not touch.

  4. Bake in preheated oven for 15 minutes. Remove from oven and turn sweet potatoes. Bake for an additional 5 minutes or until sweet potatoes are lightly brown and tender when pierced with a fork. Turn on broiler and broil sweet potatoes for 3 to 5 minutes or until edges start to crisp slightly. Watch carefully so sweet potatoes do not burn.

  5. While fries are baking, mix togther fry sauce by whisking mayo and bbq sauce in a small bowl. When fries are done, serve immediately with fry sauce, if desired.

Recipe Notes

1. For the mayo I like to use this homemade version the best.

2. For the barbecue sauce, you can use any kind you like. We like this homemade one.

3. Any leftovers can be stored in the refrigerator for up to 3 days and reheated in a 350 degree F oven for 10-15 minutes or until warm.
