Brownies for a Crowd

These brownies for a crowd mix up quick in one bowl and are amazingly delicious. They're perfectly soft and chewy and freeze great for later.

Ingredients

  • 2 cups butter 4 cubes
  • 4 cups (30 ounces) granulated sugar
  • 2 cups (8 ounces) cocoa powder natural or dutch process
  • 1-1/2 teaspoons salt
  • 1-1/2 teaspoons vanilla
  • 6 large eggs
  • 1-2/3 cups (16 ounces) all-purpose flour

Instructions

  1. Preheat oven to 325 degrees F. Line a half sheet baking pan with parchment paper and set aside.

  2. In a large microwave safe bowl, melt butter in the microwave (I like to cover it with plastic wrap so it doesn't splatter). Add sugar and cocoa powder and stir well. Add salt, vanilla and eggs and mix until incorporated. Add flour and mix until no flour streaks remain.

  3. Spread batter evenly on prepared pan and bake in 325 degree oven for 30-35 minutes or until set in the center (no longer jiggly). Be careful not to over bake. Let cool before slicing.

Recipe Notes

These brownies freeze great. Just let them cool completely then pack in ziplock freezer bags for up to a month.
