Mango Slushies

Fresh Mango Slushies or Popsicles {Honey-Sweetened}

These fresh mango slushies are out of this world amazing. With their sweet, creamy texture and slight lemon tang, they are an ice cold treat that's delicious on a hot, summer day.

Ingredients

  • 1 ripe mango peeled, cored and sliced
  • 2 tablespoons (1.65 ounces) raw honey
  • 1 ½ tablespoons fresh lemon juice from 1/2 lemon
  • 2 to 3 fresh mint leaves optional
  • 20 large ice cubes about 2 cups

Instructions

  1. In a blender jar combine the mangoes, honey, fresh lemon juice and fresh mint leaves and blend until smooth and honey is dissolved.

  2. Add ice cubes and blend until pureed. Add more ice, as desired to reach a slushie consistency. Taste and add more honey, if needed. Serve immediately or freeze into popsicles (see note).

Recipe Notes

1. I've also made this recipe with agave in place of the honey. agave has the benefit of dissolving a little easier than raw honey. You may need to use slightly more agave than honey to get it sweet enough.

2. The fresh lemon juice is a very important ingredient. I’ve made them a few times with lemon juice that’s been pre-squeezed or frozen and believe me, it’s just not the same.

3. I like to freeze these slushies into popsicle molds. If you don't have popsicle molds, plastic cups with popsicle sticks work great too. I like to use the kind with plastic lids like for on-the-go salad dressings.
