Honey-Sweetened Pina Coladas

Non-alchoholic (virgin) honey-sweetened pina coladas--the perfect cold drink (or frozen treat) on a warm day.

Ingredients

  • ½ cup pineapple juice
  • 1 cup chopped pineapple I use fresh
  • 1 cup cream see note
  • cup (4 ounces) raw honey see note
  • teaspoon vanilla extract
  • ¼ teaspoon coconut extract
  • 2 cups ice

Instructions

  1. Place pineapple juice, chopped pineapple, cream, honey, vanilla and coconut extract in blender jar and blend until smooth and honey is dissolved.

  2. Add ice and blend well. Serve immediately.

Recipe Notes

1. I haven't tried it but I think this recipe would work well with coconut cream (maybe omit the coconut extract) or half and half. 

2. This recipe works best with runny honey. If honey has crystalized you may want to liquify it before using in this recipe. I haven't tried it but I think agave will substitute well. Just taste after blending to make sure it is sweet enough (as honey tends to be a bit sweeter) and add more, if needed.

3. These pina coladas can also be frozen into popsicle molds for a delicious frozen treat.
