Soft and Chewy Granola {Honey-Sweetened}

This soft and chewy granola is hands down my favorite homemade granola. It's honey-sweetened and quick and easy to make.

Ingredients

  • 3/4 cup (9 ounces) honey
  • 2/3 cup (2.7 ounces) coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon salt
  • 4 cups (12.6 ounces) quick oats
  • 1/2 - 1 cup slivered almonds optional

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and spray with cooking spray.

  2. If honey and coconut oil are solid, melt together in the microwave in a large mixing bowl. Add the other ingredients in order and mix well.

  3. Spread granola evenly on parchment paper and bake in preheated oven for 4 minutes.

  4. Take out and stir, then spread back out. Bake for an additional 4 minutes.

  5. Remove pan from oven. Without stirring, let it rest for at least an hour to cool. Store in a airtight container for a few weeks (good luck getting it to last that long).
