
This soft and chewy granola is hands down my favorite homemade granola. It's honey-sweetened and quick and easy to make.
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and spray with cooking spray.
If honey and coconut oil are solid, melt together in the microwave in a large mixing bowl. Add the other ingredients in order and mix well.
Spread granola evenly on parchment paper and bake in preheated oven for 4 minutes.
Take out and stir, then spread back out. Bake for an additional 4 minutes.
Remove pan from oven. Without stirring, let it rest for at least an hour to cool. Store in a airtight container for a few weeks (good luck getting it to last that long).
