Ingredients

  • 4 - 4 ½ pound bone-in pork butt roast
  • 1 ½ tablespoons prepared yellow mustard
  • 2 ½ teaspoons salt
  • 2 ½ teaspoons ground black pepper
  • 2 ½ teaspoons garlic powder
  • 3 tablespoons + 1 teaspoon mesquite seasoning
  • 1 ½ tablespoons liquid smoke

Instructions

  1. Rub pork all over with prepared mustard.

  2. In a small bowl, mix together salt, pepper, garlic powder, and mesquite seasoning. Sprinkle seasonings evenly over roast, gently pressing with fingers.

  3. Add oil to a large skillet and heat over medium heat until oil is rippling. Add roast and brown for 2 to 3 minutes on all sides.

  4. Transfer roast to a large slow cooker and add liquid smoke. Cook on LOW for 8-10 hours or until pork is very tender.

  5. Transfer the pork from the slow cooker to a 9x13 glass pan with the remaining liquid. Shred the pork using a couple of forks.

  6. Optionally you can stick the pork under a broiler for 3-5 minutes until lightly browned on edges. Serve on buns with barbecue sauce.
