Turkey Taco Lettuce Wraps {20-minute meal}

Light and healthy, these turkey taco lettuce wraps taste delicious and perfect for a quick (under 20-minute) weeknight meal.

Ingredients

  • 1 ½ to 1 ¾ pound ground turkey
  • ½ cup diced onion
  • 2 cloves garlic minced
  • ¾ cup cilantro leaves chopped
  • ¾ teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon coriander
  • 2 Roma tomatoes chopped
  • 2 tablespoons sour cream
  • 1 to 2 tablespoons fresh lime juice to taste
  • Salt and pepper to taste
  • 2 heads Bibb or Butter lettuce washed
  • Toppings: Sour cream, avocado, grated cheese optional

Instructions

  1. In large skillet over medium heat add turkey, diced onion and minced garlic and cook until turkey is browned.
  2. Add chopped cilantro, salt, pepper, coriander, chopped tomatoes and sour cream. Then add fresh lime juice to taste (start with 1 tablespoon and add more as desired).
  3. Stir and cook for 2-3 minutes until mixture is warmed through. Taste and add salt and pepper, if needed.
  4. Serve immediately in lettuce leaves with additional sour cream, chopped avocado and grated cheese, if desired.
