Dark Chocolate Honey Mousse

One of my life-time loves is chocolate. As I’ve gotten older and can’t eat whatever I want anymore without seeing the effects, I’ve found myself becoming much more selective about the things that I do want to eat. Chocolate will forever be on that list. But not just any chocolate. Fake-y, cheap-y chocolate no longer cuts it.

Yep, plastic-tasting chocolate Easter candy, I’m looking at you.

For me, it’s all about the good stuff.

And this recipe, it IS the good stuff.

We’re not really fancy shmancy people around here. Like I’ve never thrown a dinner party and filled fancy crystal glasses with chocolate mousse and served it to my distinguished guests (except maybe in my dreams).

In my real life I make chocolate mousse and put it in any dishes I can find that happen to be clean. Then I hurriedly throw them at my kids before my toddler starts her full on temper tantrum.

Moooooooose!

Dark Chocolate Honey Mousse

There are no tiny silver tasting spoons around here (except maybe the fake ones from the dollar store that I used for these pictures). No, this stuff disappears in about 3 seconds flat as they shovel it in their mouths and then hold out their dishes for more. Then afterwards I proceed to clean up their sticky chocolate faces,

chocolate hands,

chocolate table,

chocolate walls,

chocolate everything.

Yep this is real life

Mom life.

That’s MY life.

But I love it.

And you know those days? Those rough days of crying and temper-tantrumming toddlers. And medium-sized kids that don’t want to do chores. And teenager kids that want to argue with you ALL DAY LONG. Those kind of days?

You know what I’m talking about.

Well let me tell you a little secret.

This chocolate mousse cures a thousand sorrows

I like to dish this chocolate mousse up into tiny cups with lids (like the kind people put their salad dressings in), and put them in the far corners of the fridge (far away and hidden from all the tiny hands – if such a place were actually possible). Then I have them on hand for those kind of days. Those days when I want to wallow in my misery of crying children and eat a dozen Twix bars. Those days I need a little pick-me-up in the middle of the afternoon to get me to the end of the day. I pop one of those little guys open and even though it’s just a few bites, and it cures my chocolate craving quickly, washes away the misery, and I’m ready for more.

Bring it on kids.

But seriously, this honey sweetened chocolate mousse is perfectly sweet and perfectly wonderful. It is such a light and delicious treat and a little goes a long way.

I absolutely love to use this mousse as a cake or cupcake frosting. It pipes onto cupcakes beautifully and actually tastes good (unlike the majority of other cake frostings out there).

If you don’t care for dark chocolate chips, feel free to substitute with milk, but you may have to cut down on the honey a bit so it’s not too sweet. For the honey, I use raw honey which tends to be a bit sweeter than honey you get from the store. So if you are using the stuff from the store, keep that in mind.

Ingredients

  • 1 cup (6 ounces) good-quality dark chocolate or dark chocolate chips see note
  • ¼ cup (3 ounces) raw honey
  • 2 egg yolks
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cup (11 ounces) heavy whipping cream

Instructions

  1. In medium-sized mixing bowl, add the chocolate chips and honey. Melt in microwave at 80% power in 30 second increments, stirring in between until smooth and melted.
  2. Whisk 2 egg yolks into the warm chocolate mixture until smooth. Then add 1 teaspoon vanilla extract and stir. Set chocolate mixture aside to cool slightly.

  3. In large mixing bowl or the bowl of a stand mixer, add heavy whipping cream and whip with beaters until soft peaks form.
  4. Add the chocolate mixture to the whipped cream and gently stir to incorporate.
  5. If using as a mousse, pour or pipe into serving containers and refrigerate an hour or so before serving or up to 3 days. Garnish with chocolate, if desired.
  6. If using as a cake frosting, frost the cake or cupcakes immediately (making sure they are perfectly cool first). Then chill in the refrigerator until ready to serve.
