Hello friends!

It’s a little strange posting a frozen treat on a day when I want to turn the heat on. It’s not cold per se. Just a little on the chilly side of things. For some reason the weather doesn’t seem to realize it’s supposed to be summer here in a few days.

But I’m not going to let the weather gyp me out of eating my share of delightful frozen confections this summer. And this fresh peach sherbet is definitely on the top of the list.

The idea for this recipe came as I was devouring a bowl of this fresh strawberry sherbet the other day (with fresh strawberries from our garden). I got to thinking that fresh peaches would be amazing in it. So of course I had to give it a try.

And guess what? It exceeded my expectations. It’s definitely not something I can keep to myself.

This fresh peach sherbet is 100% sweetened with peaches and honey. And so creamy even though there is no cream in the recipe.

Just four ingredients, my friends.

For maximum sweetness and flavor, make sure you use a perfectly ripe peaches (they should be soft but not mushy) and fresh lemon juice (rather than bottled).

Lets talk about food storage containers for a second, okay?

These Rubbermaid brilliance food containers are my new favorite food storage containers. I use them to store salads, soups, and leftovers and they are so handy. I love the tight seal which keeps food nice and fresh. Plus it’s so nice to be able to look inside and see the food.

And I don’t know about you, but if there’s anything I can do to avoid potential accidents waiting to happen (especially with kids home all summer), I’m in.

Ingredients

  • 3 cups (15 ounces) chopped fresh peaches see note
  • ½ cup (6 ounces) raw honey
  • ½ cup buttermilk
  • 1 tablespoon fresh lemon juice

Instructions

  1. Combine chopped fresh peaches, raw honey, buttermilk, and lemon juice in blender and blend until smooth. Pour into medium container with lid and chill in the refrigerator for 1 hour or up to 24 hours.

  2. Process ice cream in ice cream maker following the manufacturer's instructions. Scrape mixture into a container with a lid. Freeze ice cream for at least 2 hours before serving or up to a week.
