Lemon Scones

Delicious tender little lemon scones that are lightly-sweetened with a yummy lemon flavor. These lemon scones remind me of an English tea party. They would be perfect for breakfast, brunch, a snack, or even dessert. Fill them with lemon curd and you might just think you died and went to lemon paradise.

If I could write a subtitle to this post I think it would say,

If life give you lemons, make lemon scones.

And then I might add this caveat,

And even if it doesn’t, go buy some lemons and make them anyway.

Phew it’s a good thing I’m just a food blogger and not a philosopher. That was a stretch. hahaha.

Maybe a good lesson to be learned so far is: don’t try to write a blog post when it’s the middle of the afternoon and you got less than five hours of sleep the night before. Things tend to get a little mixed up and you may start philosophizing on lemon scones.

So anyway, how are you?

Other than a little sleep deprived (thanks to my daughter’s early morning insomnia) I am great.

And I’m really really excited to talk to you today about these lemon scones because they are so good.

I tried many variations to perfect this recipe. And thanks to my life (er…my uncle actually) giving me a box of lemons, I had plenty of lemons to make dozens and dozens of these delicious, perfect little lemon scones.

I love lemons

Nobody complained at my house over the fact that we had too many lemons. In fact, when the box was gone I think we all wandered around looking a little lost for a few days. Well at least I know I did.

Until I bought some more to fill the void.

Nobody should have to live life too long without lemons.

Especially in the winter.

Yes winter. It snowed yesterday. So I guess it’s still winter here despite what the calendar and my heart is telling me.

But cheerful and bright, lemons are almost as good as flowers to cheer me up this time of year. I love them. There’s nothing quite like a beautiful bowl full of lemons sitting on the counter.

And do you know what’s even better than looking at the cheerful bowl full of lemons sitting on your counter? Making yummy food with them.

What is the perfect lemon scone like?

When I set out to create this recipe I wanted my lemon scones to be able to stand alone, proud of their unique lemon flavor without having to rely on a glaze to identify them as such. And I hope you don’t mind me saying so, but I think this recipe does that. And it does it well.

There’s probably some cooking rule from the experts out there that says you’re not supposed to squeeze fresh lemon juice into baked goods because it changes the structure and the way the baking powder or soda acts. Yada yada yada.

Seems like I ran across that one once upon a time. And then I looked the other way when creating this recipe. Because (and I repeat): I wanted my lemon scones to be able to stand alone, proud of their unique lemon flavor without having to rely on a glaze to identify them as such.

And I’m really not too much into the lemon extract flavoring cause I think it has a weird aftertaste personally. So I had no choice except to bend the rules a little on this recipe and just go for the lemon juice and hope it didn’t change the structure too terribly.

And after making dozens and dozens of these tender little lemon scone morsels. I realized that this recipe’s success can be measured in the fact that I can’t seem to walk away without downing 2 or 3 in one sitting every time I make them. It’s like they have magnetic properties that make them fly through the air right into my mouth. Crazy, huh?

My favorite way to eat them

We love them plain, but do you know what’s even better? Try filling them with this lemon curd. Oh boy. You might just wonder if you’ve stepped into lemon paradise for a few minutes.

So there ya have it. I’ll let you be the judge of whether you’re gonna let the expert bakers’ so-called advice stop you from making these. Meanwhile I’ll be over here minding my own business making rule-bending lemon scones like there’s no tomorrow.

Delicious tender little lemon scones that are lightly-sweetened with a yummy lemon flavor.

Ingredients

  • 3 ½ cups (17.5 ounces) all-purpose white flour
  • cup (5.5 ounces) granulated sugar plus more for sprinkling on top, if desired
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons lemon zest from about 2 lemons
  • ¾ cup (1 ½ sticks, 6 ounces) cold butter cut into tablespoon-size pieces
  • ¾ cup + 2 tablespoons buttermilk
  • ¼ cup freshly squeezed lemon juice from about 1-2 lemons
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 400 degrees F. Line a large, rimmed baking sheet with parchment paper and set aside. 

  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and mix well. Stir in the lemon zest. 

  3. Cut the butter into the flour mixture using a pastry cutter or 2 knives until the butter is in pieces the size of large peas.

  4. In a large liquid measuring cup mix together the buttermilk, lemon juice, and vanilla and then pour it over the flour/butter mixture. Stir together a few times. Then knead with your hands just 2-3 times until the dough starts to come together. Be careful not to over-knead or the scones will be tough instead of flaky.

  5. Turn the dough out onto a surface dusted with 1-2 tablespoons flour. Form the dough into a round and divide it in thirds. 

  6. Working quickly, gently pat each dough piece out into a circle 5 to 6 inches in diameter and then divide the circle into 6 pie-shaped wedges. Place the scones on the prepared baking sheet and repeat this step with remaining dough pieces until you have 18 small scones.

  7. Brush scones with melted butter and sprinkle with a little bit of granulated sugar (if desired). Bake in preheated 400 degree F oven for 15 minutes or until lightly golden brown and cooked through. Serve warm or cooled.

Recipe Notes

1. Be sure to zest the lemons before juicing them.

2. For an extra special treat, serve these scones filled with this lemon curd.
