At first glance this recipe may look basic, but let me tell you it is in high competition to be one of my favorite side dishes ever.

Oh I love this roasted cauliflower!

It’s one of those few things that I could probably eat every day and never get tired of. It really is that good.

For people who don’t really like vegetables because all they’ve ever had are steamed (tasteless) vegetables, I feel bad for them. They don’t know what they are missing.

So today I’m righting a wrong and telling you my friends, a great secret.

Roast your vegetables!

Sorry to exclaim that so loud, but seriously.

It will change your entire view of vegetables. You will start to crave them. Because they are so good when they are roasted.

Like seriously good.

As in I-can’t-believe-you-are-tasting-like-this-and-still-a-vegetable-good.

As in my-kids-actually-like-and-eat-veggies-without-complaining-most-of-the-time-good.

REALLY!

So today we’re talking cauliflower because roasted cauliflower is Ah-may-zing.

I sure love this recipe for roasted cauliflower.

I know it will become one of your favs too.

The garlic-butter seasoning + parmesan really is out of this world good, but you can substitute olive oil for the butter if that makes you happy. The sky really is the limit when it comes to variations on this recipe. You can try an Italian variation with Italian type spices too. There are so many possibilities.

Okay I’ll quit blabbing your ear off so you can get to the food. I know that’s why you’re here. And it’s all good because it’s true for me too. I’m always here for the food.

Roasted Cauliflower

Ingredients

  • 1 head cauliflower
  • 5 tablespoons butter
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 large clove garlic minced
  • ¼ teaspoon black pepper
  • 2-3 tablespoons freshly grated parmesan cheese optional

Instructions

  1. Preheat oven to 400 degrees F.
  2. Wash cauliflower and chop head into bite sized florets, discarding the core. Add cauliflower to large bowl.
  3. In a microwaveable cup or small bowl, combine butter, garlic powder, salt, minced garlic, and black pepper and microwave until butter is melted. Stir well to combine.
  4. Pour butter mixture over prepared cauliflower florets and stir well to combine. Spread seasoned cauliflower on a large baking sheet in a single layer. Sprinkle with freshly grated parmesan cheese, if desired.
  5. Bake in preheated 400 degree F oven. Remove pan from the oven after 15 minutes and using a spatula, flip the cauliflower so it will roast evenly. Return pan to oven and bake an additional 10-20 minutes (for a total of 25 -35 minutes roasting time), flipping again if needed, until cauliflower starts to darken slightly on the edges.

Recipe Notes

1. Variations on this recipe are endless. Substituting olive oil for the butter or using Italian seasons are a few ways you can change it up, but feel free to add your own style.
