Berry season is coming up soon and I can’t wait. Of course with Valentine’s day this week, berries are making their appearance everywhere you look.

And I don’t mind one bit.

I love berries. All kinds of berries.

And this Russian berry cream is the perfect berry no-bake dessert.

It’s a little bit on the fancy side of a dessert, but easy as can be to make.

For my family, my favorite way to serve this is in these cute jelly jars with these plastic lids (aff. links).

It’s so much easier to keep them in the fridge contained in their little jars so I don’t have to worry about spills happening accidentally.

But really the possibilities are endless as far as serving dishes go. This dessert would be beautiful in goblets or ice cream dishes or even filling a trifle bowl topped with berries.

The lady that shared this recipe with me Linda B. served it at a baby shower in clear plastic cups with frozen berries and a cute wafer roll cookie poked in. And it was so good.

This recipe includes a honey-sweetened variation

I mentioned before that my 10-year-old son has not eaten sugar for 2 years (totally his own decision) so we make a lot of sugar free desserts around here. I’ve included in this recipe a honey sweetened variation that is really yummy.

Using the honey will give a slight off-white appearance rather than creamy white, but it still looks beautiful (the pictures in this post with the blueberries like the one below are the honey-sweetened version).

My favorite topping for this dessert is probably raspberries, but really any type of berries would work: blackberries, raspberries, blueberries (even frozen berries as I mentioned above – you don’t even need to worry about thawing them completely). I think chopped up mangoes would delicious, but to me ANYTHING with mangoes is delicious. Oh how I love ’em.

Do you have any big plans for Valentine’s Day yet?

I usually try to make a little nicer dinner to serve for the family with nicer dishes and a few decorations. It just makes things fun. Last year my daughter and I also had a Valentine’s tea party with her stuffed animals. So cute.

I think this dessert would be perfect for either. Can you imagine how cute it would be in little tea cups?

Oh my. I might just have to try it.

Russian Berry Cream {with Honey Sweetened Variation}

Ingredients

  • 1 cup boiling water
  • 1 envelope unflavored gelatin see note
  • 3 cups heavy cream
  • 1 ½ cups (11.25 ounces) granulated sugar see note for honey variation
  • 1 tablespoon vanilla extract
  • 1 ¼½ cups sour cream see note
  • Fresh berries for topping, see note

Instructions

  1. In a small bowl add 1 cup boiling water and 1 envelope unflavored gelatin, whisking until completely dissolved and lump free. 

  2. In a medium saucepan, heat 3 cups heavy cream over medium heat until small bubbles form around the edge of the pan. Stir in 1 1/2 cups sugar (or see note for honey variation) until dissolved.

  3. Remove saucepan from heat and stir in dissolved gelatin mixture and vanilla. Gently fold in sour cream until melted and creamy with no lumps.

  4. ½Pour cream mixture into serving dishes (see note for options). Refrigerate for 6 hours (or up to 36 hours). Add berries to individual serving dishes before serving.

Recipe Notes

1. I use Knox brand of unflavored gelatin. You can find it in the baking aisle near the flavored gelatin.

2. Instead of the sugar you can use a heaping ½ cup (7 ounces) raw honey.

3. I have only ever used full fat sour cream in this recipe, but feel free to experiment if you would like. I think you will find that lowering the fat content will make quite a bit of difference in the taste.

4. The recipe originally called for raspberries and I still like them the best, but I think any berries would be delicious. You could even try another type of soft fruit like chopped mangos. I bet those would really be good.

5. The possibilities for serving dishes are only limited by your imagination. My favorite way to serve this to my family is in cute little half pint or pint sized jelly jars. These lids make keeping them in the fridge so easy. But if you are going on the fancier side, think goblets, ice cream dishes or even a large trifle bowl topped with berries.
