What’s not to love about a spring mix grape salad drizzled with a lightly spiced apple cider vinaigrette? The colors, the flavors, the freshness. I love it all.

This salad is glorious.

And I’m not talking just looks.

Although, wow. It’s looking pretty tasty right now staring at me there.

Hello beautiful.

And believe me, my taste buds feel the same way after I take a bite.

Helllooooo beaauttiffulll!!

The inspiration for this salad comes from our sweet friend Carmen V. who is from Columbia. We visited Carmen in Connecticut back in October as part of a trip our whole family took back east where we visited friends in four states. We stayed with Carmen for a couple of days and she so lovingly cooked for us so many of her delicious foods.

Variations of this salad were served to us at several of the meals and the delicious flavors continued to delight my taste buds again and again.

Keep it simple or change it up

There really are so many ways to change up this salad if you’re looking for variations. Carmen made hers with Romaine lettuce which was delicious.

I usually opt for a spring mix because I love the color variation.

You can change up what goes in the salad also or add new toppings. I sometimes sprinkle on a little cheese which is always a good idea. How about adding some nuts? Or bacon. I’ve never met a salad that wasn’t improved with bacon. But really all of these ideas are optional because this salad can shine away beautifully on its own.

And just look at the apple cider vinaigrette

This salad dressing is powerful good and it doesn’t take many ingredients to get there.

I almost always serve the dressing in this salad separate from the salad because otherwise the salad tends to wilt quickly if there is any left over.

And nobody likes leftover wilted salad.

If you are wanting to combine the salad and dressing, start with about half the dressing first, then toss and add more if needed. Depending on your tastes, you may not need all of it.

Okay, my friends. I think that just about covers it.

The only thing left is to tell you that combining the salad with the dressing is really the winning combination.  It is just the right mixture of zesty and a little bit of sweet with a little hint of fresh tasting cilantro coming through too.

Ingredients

Salad:

  • 5 ounces spring salad mix see note
  • 2 cups halved grapes
  • 1-2 tomatoes sliced thin
  • 2-3 pearled onions sliced thin, see note
  • 1-2 tablespoons chopped cilantro

Dressing:

  • ½ cup extra light olive oil
  • 2 tablespoons apple cider vinegar see note
  • teaspoon dried thyme
  • teaspoon oregano
  • teaspoon salt
  • ¼ teaspoon granulated sugar
  • 1 clove fresh garlic minced

Instructions

  1. Combine all salad ingredients in large bowl and toss together.

  2. Combine dressing ingredients in small jar with a fitted lid and shake well. Dressing can be made in advance and refrigerated for up to a week. Shake well before using.

Recipe Notes

1. I almost always serve the salad dressing in this salad separate from the salad because otherwise the salad tends to wilt quickly if there is any left over. If you are wanting to combine them, start with about half the dressing first, then toss and add more if needed. Depending on your tastes, you may not need all of it.

2. Romaine or another type of lettuce can be substituted for spring mix.

3. I usually used purple pearled onions in this recipe. Pearled onions are very small (about 1-inch diameter) very mild onions. If you can’t find them, green, medallion, or another mild onion can be substituted for pearl onions.

4. I use Bragg’s apple cider vinegar in this recipe.

5. Optional addition ideas include: grated or crumbled cheese, pumpkin or sunflower seeds, nuts, or bacon
