Spring Mix Grape Salad with Apple Cider Vinaigrette

What’s not to love about a spring mix grape salad drizzled with a lightly spiced apple cider vinaigrette? The colors, the flavors, the freshness. I love it all.

Ingredients

Salad:

  • 5 ounces spring salad mix see note
  • 2 cups halved grapes
  • 1-2 tomatoes sliced thin
  • 2-3 pearled onions sliced thin, see note
  • 1-2 tablespoons chopped cilantro

Dressing:

  • ½ cup extra light olive oil
  • 2 tablespoons apple cider vinegar see note
  • teaspoon dried thyme
  • teaspoon oregano
  • teaspoon salt
  • ¼ teaspoon granulated sugar
  • 1 clove fresh garlic minced

Instructions

  1. Combine all salad ingredients in large bowl and toss together.

  2. Combine dressing ingredients in small jar with a fitted lid and shake well. Dressing can be made in advance and refrigerated for up to a week. Shake well before using.

Recipe Notes

1. I almost always serve the salad dressing in this salad separate from the salad because otherwise the salad tends to wilt quickly if there is any left over. If you are wanting to combine them, start with about half the dressing first, then toss and add more if needed. Depending on your tastes, you may not need all of it.

2. Romaine or another type of lettuce can be substituted for spring mix.

3. I usually used purple pearled onions in this recipe. Pearled onions are very small (about 1-inch diameter) very mild onions. If you can't find them, green, medallion, or another mild onion can be substituted for pearl onions.

4. I use Bragg's apple cider vinegar in this recipe.

5. Optional addition ideas include: grated or crumbled cheese, pumpkin or sunflower seeds, nuts, or bacon
