Instant Pot Cilantro Lime Rice

This Instant Pot cilantro lime rice is easy and so delicious. It cooks up quick and goes well with so many dishes.

Ingredients

  • 1 cups long grain white rice
  • 1/2 tablespoon butter
  • 1 cloves fresh garlic, minced or 1 teaspoon garlic powder
  • 1 teaspoons fresh lime juice from about 1 lime
  • 1-2/3 cups water
  • 1 teaspoon chicken bouillon see note

Topping:

  • 1 tablespoons fresh lime juice from about 2 limes
  • 1/2 tablespoon granulated white sugar
  • 1/3 cup chopped fresh cilantro from about 1 bunch

Instructions

  1. Rinse the rice in a fine mesh strainer under cold water for 1 minute or until water runs clear.

  2. To the insert of a 6-quart Instant Pot add the white rice, butter, garlic, fresh lime juice, water and chicken bouillon.

  3. Secure the lid of the Instant Pot, set the valve to seal, and select “manual” or “pressure cook” and cook on HIGH pressure for 6 minutes.

  4. While rice is cooking, in a small bowl combine the fresh lime juice, white sugar and chopped fresh cilantro for the topping.

  5. When cook time is up, let the pressure release naturally for 10 minutes and then quick release the remaining pressure.

  6. Carefully open the pressure cooker lid. Pour the topping over the top of the cooked rice and fluff with a fork a few times to incorporate. Serve immediately. Rice can also be cooled and then refrigerated or frozen to reheat later.

Recipe Notes

  1. For the chicken bouillon, I use this homemade chicken bouillon substitute.
  2. Instead of chicken bouillon you can use 1 cup chicken broth and 2/3 cup water
