Roasted Potato Wedges

Savory roasted potato wedges with just the right amount of flavor and crisp. These make the perfect side dish to accompany so many different meals. And I've included a few variations to spice things up a bit.

Ingredients

  • 4 medium/large russet potatoes
  • 2 tablespoons canola oil
  • 1 ½ teaspoons seasoning salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions

  1. Preheat oven to 425 degrees F. Spray a large baking sheet with cooking spray and set aside.

  2. Wash potatoes and scrub skins well. Cut each potato in half lengthwise (the long way) then cut each half into 4 wedges. For a total of 8 wedges per potato.

  3. Place potato wedges in a bowl with oil and stir until completely coated. Sprinkle with seasoning salt, garlic powder, and onion powder and mix until well coated.

  4. Place potato wedges on prepared baking sheet arranged so they do not touch each other. Bake for 20 minutes in preheated 425 degree oven. Remove from oven and flip each potato. Then return to the oven and bake for another 15-20 minutes or until potato wedges are golden brown and slightly crispy.

Recipe Notes

1. This recipe can be doubled or tripled to feed more people. Just remember that it's important that you don't crowd the potatoes onto the baking sheets. You might need two or three pans so there's plenty of space for the potatoes to get cooked on all sides.

2. This recipe can be adapted with the addition of different seasonings to create unique flavors. Some of our favorite variations are adding Italian, Cajun or BBQ seasoning.
