What a beautiful day for another tasty recipe, don’t you think?

If you’ve followed along with me for any amount of time you shouldn’t really be surprised that I’m posting ANOTHER roasted vegetable recipe today. Oh how I love roasted veggies. So so good. The recipe today falls right in line with the deliciousness of the other roasted veggie recipes I’ve shared. Have you checked them out yet?

All my favorites, don’t make me pick just one. And now today I’m adding to the collection of favorites with these roasted potato wedges.

They have such a HUGE following around our house. They get gobbled up just seconds after the touch the table, it seems. And then everybody looks around longing for more.

One batch of these roasted potato wedges is never enough

I highly recommend doubling or tripling the recipe.

In saying that just remember that it’s important that you don’t crowd the potatoes onto the baking sheets. You might need two or three pans so there’s plenty of space for the potatoes to get cooked on all sides. That’s what gives them that delicious crispy action that is so tasty.

Roasted Potato Wedges

This recipe can be adapted with different seasonings to create an endless array of flavors that would accompany any kind of meal. Some of our favorite variations are adding Italian, cajun or BBQ seasonings, but feel free to experiment with what spices you like. I’d love to hear what your favorite combinations are.

Roasted Potato Wedges

Savory roasted potato wedges with just the right amount of flavor and crisp. These make the perfect side dish to accompany so many different meals. And I've included a few variations to spice things up a bit.

Ingredients

  • 4 medium/large russet potatoes
  • 2 tablespoons canola oil
  • 1 ½ teaspoons seasoning salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions

  1. Preheat oven to 425 degrees F. Spray a large baking sheet with cooking spray and set aside.

  2. Wash potatoes and scrub skins well. Cut each potato in half lengthwise (the long way) then cut each half into 4 wedges. For a total of 8 wedges per potato.

  3. Place potato wedges in a bowl with oil and stir until completely coated. Sprinkle with seasoning salt, garlic powder, and onion powder and mix until well coated.

  4. Place potato wedges on prepared baking sheet arranged so they do not touch each other. Bake for 20 minutes in preheated 425 degree oven. Remove from oven and flip each potato. Then return to the oven and bake for another 15-20 minutes or until potato wedges are golden brown and slightly crispy.

Recipe Notes
