Hello, my friends! How are you?

Before I dive in I have a quick unrelated story to share

It’s been a crazy week.  A week ago today I was taking care of my daughter who was sick and my phone slipped out of my too small front pocket and fell right in the toilet. To make a long story short, it did not survive, despite trying several youtube and other common mythical internet methods of reviving it.

Has this happened to anyone else out there?

Anyway, it was kind of weird living semi off the grid right it my own home. I had my computer with the internet, but I very quickly realized how much I rely on my phone for soooo many things.

No one could call or text me. I couldn’t call or text anyone else. If there was an emergency (thankfully there wasn’t), I’d be hitching it over to the neighbors to borrow a phone. If my car broke down (thankfully it didn’t), I’d be relying on the kindness of a stranger to help me contact someone.

Yeah it was kind of weird.

The weirdest part I think for me was how much information from my brain is stored in my phone that I lost in just a split second. Poof…calendars, to-do-lists, ideas, and more…gone forever.

I’m still mourning those losses. I should have been a better backer-upper I guess. But the good news is after a full week, today I finally was able to get my new-to-me hand-me-down phone set up. Hurray! I’m finally feeling like my brain is starting to come together again and get back to it’s normal firing patterns.

But today really all that matters is this dark chocolate honey mousse pie

Yeah it’s celebration time! And if you’d like to celebrate with me, the celebratory food of choice is this dark chocolate honey mousse pie that I’m posting about today. Believe me, it’s worthy of any celebration.

And I’m so excited to share this recipe with you.

Dark Chocolate Honey Mousse Pie

Oh my, it is good. Do you remember this dark chocolate honey mousse that I posted back in January? It’s inspired by that recipe. I knew it needed to be converted to pie form. I made some changes to it to make it a little less rich (so I could handle a pie-sized piece) and adapt it to fill a 8 or 9-inch pie shell.

Speaking of pie shells, I usually follow the instructions for blind baking a single pie crust from this pie crust recipe. Make sure to cool the pie crust completely before filling it with mousse. You can also use a graham cracker crust or other premade pie shell.

Why I love this pie

Okay, let me tell you about this pie.

I love that this recipe is quick. It just takes a few minutes to whip it up. And if that’s not enough, you can make it up to three days in advance. During the busy holidays, premade pies are totally the way to go. Leave the time on the big day for other more important things like spending time with loved ones.

Can you believe it’s honey-sweetened? That’s right, my friends. No processed sugar (unless you count what’s in the dark chocolate chips, which we don’t –haha).

Okay it’s time for me to scoot. My willpower only lasts so long when I’ve got pie in the fridge and chocolate pie at that. Adios, mis amigos.

Dark Chocolate Honey Mousse Pie

This dark chocolate honey mousse pie is decadent without being overly rich and has a delicious creamy texture. For any chocolate lovers out there, this pie equates to happiness in every single bite.

Ingredients

  • 1 ¼ cups (7.5 ounces) good-quality dark chocolate or dark chocolate chips see note
  • cup (4 ounces) raw honey
  • 2 egg yolks
  • 1 teaspoon pure vanilla extract
  • 2 cups heavy whipping cream
  • 1 8 or 9-inch prepared pie shell see note
  • dark chocolate flakes for garnish, see note

Instructions

  1. In medium-sized mixing bowl, add the chocolate chips and honey. Melt in microwave at 80% power in 30 second increments, stirring in between until smooth and melted.

  2. Whisk 2 egg yolks into the warm chocolate mixture until smooth. Then add 1 teaspoon vanilla extract and stir. Set chocolate mixture aside.

  3. In large mixing bowl or the bowl of a stand mixer, add heavy whipping cream and whip with beaters until soft peaks form.

  4. Add the chocolate mixture to the whipped cream and gently stir to incorporate.

  5. Pour mousse mixture into prepared pie shell, cover, and chill in the refrigerator for 2 hours or up to 3 days in advance. Garnish with grated chocolate before serving, if desired.

Recipe Notes

1. My preferred brand of chocolate is Ghirardelli

2. For the pie shell, I usually follow the instructions for blind baking a single crust pie crust from this pie crust recipe. Make sure to cool the pie crust completely before filling it with mousse. You can also use a graham cracker crust or other premade pie shell.

3. For an easy garnish, grate a bar of chocolate with a cheese grater or vegetable peeler to create chocolate flakes.

  2. Do you use unsweetened or sweetened chocolate?

    1. Hi dawn, I use dark chocolate which is very lightly sweetened. I’ve never tried it with bittersweet unsweetened chocolate . Hope that helps!
