This Instant Pot cilantro lime rice is easy and so delicious. It cooks up quick and goes well with so many dishes.

I love me a good plate of Mexican food. And this cilantro lime rice makes a delicious side dish for all your favorites. This version is made even easier in the Instant Pot (i.e. electric pressure cooker).
How to Make Instant Pot Cilantro Lime Rice
One of the secrets for a yummy batch of rice is to rinse it before cooking. This gets rid of the starch and makes the rice nice and fluffy.

Place the rice in the Instant Pot along with butter, garlic, fresh lime juice, water and chicken bouillon. Lock the lid in place. Select “Pressure Cook” and make sure it is on high pressure. The rice cooks in just 6 minutes.
While the rice is cooking, chop up some cilantro and squeeze some fresh limes. Add in a little sugar to make a delicious topping for the rice.

Once it beeps, let the pressure release naturally for 10 minutes (or as long as you can wait). Add the topping, fluff with a fork and it’s ready to serve.
Easy peasy, lime squeezy.
What to serve with this Rice
The sky is the limit, my friends.
I don’t about you, but Mexican is one of my favorite kinds of foods. These fish tacos are delicious enough to have every night of the week, for example. This rice would be amazing served alongside. Then there’s these chimichangas and this sweet pork that will really knock your socks off.
What’s your favorite Mexican dish? Tacos? Enchiladas? Tostadas?
Any of those would be delicious with this rice. Enjoy!
