Lemon Snickerdoodles

Hello hello.

I mentioned that my family went to Arizona right after Christmas. One of the best things about Arizona is the citrus trees. I can’t even tell you how jealous I am of the fresh citrus trees that are everywhere down there, growing in people’s backyards.

My family sent me home with some fresh fruit from their trees, including fresh lemons.

Lemons are definitely one of my love languages.

They are my winter blues cure. On the same level as fresh flowers and sunlight. An absolute need for me at all times, but especially in the winter.

Last year I shared several lemon favorites with you:

  • Lemon Scones – Light and flakey and deliciously lemon flavored, these lemon scones totally rock my world. And will yours too. They are amazing.
  • Lemon Curd – If want a yummy filling for those lemon scones, this lemon curd is amazing and simple to make. It seriously makes me smile just thinking about it.

But today, my friends, it’s all about these lemon snickerdoodles.

Yes, these lemon snickerdoodles have truly won over my heart.

Why I love these lemon snickerdoodle

They have slight crispy bite with a soft and chewy middle, similar to the snickerdoodle for which they are named. And that fresh lemon juice and zest gives them a lovely natural flavor. Oh my, it’s delightful.

They whip up quick (under 30 minutes – yay!). And I’ve frozen them too, so lemon cookies can be mine at any time (this is a slightly dangerous proposition).

Lemon Snickerdoodles

Ingredients

  • 1 ½ cups (6.25 ounces) all purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ¾ cup (5.65 ounces) granulated sugar
  • ½ cup butter room temperature
  • 1 ½ teaspoons lemon zest from 1 medium lemon
  • 1 large egg
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon freshly squeezed lemon juice
  • 3 tablespoons granulated sugar for rolling

Instructions

  1. Preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment paper and set aside.

  2. In a medium mixing bowl add flour, baking powder, salt, baking soda, and cream of tartar. Whisk to combine and set aside.

  3. In a large mixing bowl cream together softened butter, sugar, and lemon zest for 2 to 3 minutes with a mixer until creamy. Add egg, vanilla extract and freshly squeezed lemon juice and mix until combined well (about 1 to 2 minutes).

  4. Add flour mixture to wet ingredients all at once and mix until mixture starts to come together into a dough.

  5. Place 3 tablespoons of granulated sugar in a shallow bowl. Scoop dough by tablespoons (I use a #60 cookie scoop) and roll into a balls about 1-inch in diameter. Roll dough balls in sugar until coated and place on prepared baking tray, leaving 2-inches of space in between to allow for spreading.

  6. Bake in preheated 350 degrees F oven for about 11 to 12 minutes or until edges are firm to the touch, but are still pale. Remove from oven and let rest on trays for 1 to 2 minutes to firm up slightly before transferring to a cooling rack to cool completely. 

Recipe Notes

1. Watch the baking time carefully. You are going for barely done. Golden brown cookies will be crispy rather than soft and chewy.

    Omg! Lemon is my absolute favorite flavor of all time and snickerdoodle is my favorite cookie.. I have everything on hand to make these to 😁🍋🍪.. looks like I’m going to be whipping up a batch this afternoon..😊 as I’m super excited to try them!
