I’m super excited today to share this soft and chewy granola recipe with you. I actually had some today for breakfast with a little half and half and fresh berries. Yum. It easily could have passed for dessert.

It’s perfectly sweetened so I didn’t even need to add any additional sweetener at all.

How to make this soft and chewy granola

I’ve tested this recipe using raw, unfiltered honey we get from our own hives. I haven’t tried it with honey from the store. Since it often contains additives of water and corn syrup, I’m not sure that the texture will be the same. But I expect it will still taste good!

The main thing with the honey and coconut oil is to make sure they are are runny. If they are solid, just microwave them for a couple of minutes until they are. You’ll want them runny so they mix evenly with the granola (yes I learned the hard way with this).

Then add in the other ingredients and mix well. This recipe is very adaptable. Leave out the nuts. Try different nuts. The only thing I would say with adapting it is this. Be careful to not add too many additional ingredients that you loose the nice chewy texture. You can try adding in raisins or other dried fruit after it bakes.

Speaking of baking. The granola bakes quick. Just 4 minutes then stir and 4 minutes more. Boom. Done.

I know it’s going to take a lot of self control to leave it sitting on the counter until it cools. But in the end you will thank me. It will hold together much better. So resist the urge to dig in as soon as it comes out if you can.

My favorite serving suggestions

Honestly I can eat the stuff plain and do often by the fistfuls. My nephew calls it his delight.

I also love to eat it over plain or vanilla yogurt. Fresh fruit or berries on top. What a treat.

We store leftover granola (when there is any) in a sealed glass jar in the pantry. It will last a few weeks if you don’t have as many eaters as we do. Recipe makes 8 cups (a half gallon wide mouth jar is perfect).

Ingredients

  • 3/4 cup (9 ounces) honey
  • 2/3 cup (2.7 ounces) coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon salt
  • 4 cups (12.6 ounces) quick oats
  • 1/2 – 1 cup slivered almonds optional

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and spray with cooking spray.

  2. If honey and coconut oil are solid, melt together in the microwave in a large mixing bowl. Add the other ingredients in order and mix well.

  3. Spread granola evenly on parchment paper and bake in preheated oven for 4 minutes.

  4. Take out and stir, then spread back out. Bake for an additional 4 minutes.

  5. Remove pan from oven. Without stirring, let it rest for at least an hour to cool. Store in a airtight container for a few weeks (good luck getting it to last that long).

    Mine was very tasty and soft and chewy just like a chewy granola bar. I did use whole oats and my oats did not really stick together though (which isnt a big deal). any tips? if I throw in chia seeds do you think that would help it to stick together?5 stars

    Hi! Is it possible to use old fashioned oats, not quick cooking? It’s all I have. If so, would you recommend and modifications (cook time/temp, etc.)? Thank you!

    1. It will be a bit chewier Monica but you could definitely give it a try. I would probably start by keeping cook time and temp the same and see what you think.
