These fresh mango slushies are out of this world amazing. With their sweet, creamy texture and slight lemon tang, they are an ice cold treat that’s delicious on a hot, summer day.
Jump to RecipeHello, Hello!
How’s your summer going, my friends?
However you answer that question, these mango slushies are sure improve it.
Do you love mangoes like I love mangoes?
Oh my my my. If they are perfectly ripe, juicy and sweet, mangoes are certainly on my list of top five favorite fruits. And when I eat them in a mango slushie like this one, I forget all about the other yummy fruits there are out there in the world and end up deciding they ARE my favorite fruit.
Seriously these mango slushies are SO SO good.
Have you tried my strawberry slushies yet? Those are outstandingly delicious and we love them so dearly. Yes, strawberry slushies definitely have a huge place in my heart. Especially in the summer. In fact, my freezer contains several hidden places where strawberry slushie popsicles reside in case of an emergency craving (shhh…don’t tell my kids).
But these mango slushies, my friends. I could cry they are so good.
Can you believe they are made with no processed sugar? If you know me by now, you probably CAN believe it. I make as many things as I can get away with, without processed sugar. I usually sweeten these mango slushies with honey, but you can also use agave.
Of course I love the mango flavor. I told you I love mangoes. But that’s not the only reason I love these mango slushies. The mangoes give these slushies a kind of creaminess that is just so lovely.
And that little bit of fresh lemon tang. Oh my. Fresh lemons seriously belong in my fridge at all times during the summer. Okay the whole year. Don’t try to substitute with any kind of pre-squeezed lemon juice. It just will not be the same.
Do you see those itty bitty flecks of green in these slushies?
Those are the mint leaves. They are blended up leaves like the ones garnishing the top.
So can we just talk about the mint leaves for a second?
I say in the recipe that they are optional because I know that not everyone happens to have fresh mint on hand (um….by the way you should. Just so you know). But please please please try them if you do have access to fresh mint. They turn these slushies from good to out-of-this-world-good just by that ingredient alone.
Love that little bit of fresh mint flavor.
My favorite way to eat these is right after I make them. As in: spoon-it-out-right-out-of-the-blender-since-you-can’t-wait-to-find-a-clean-cup. And even though this recipe says two servings, I have no shame admitting that I usually eat the whole thing myself. Mmmmh…
So before I toodle off, I just have to tell you that you can turn these mango slushies into popsicles by pouring them into popsicle molds like these cool rocket ones or we use these 4-ounce portion cups with plastic lids all the time for a more disposable option. Such a fun summer treat for kids…if you’re willing to share.
And I’ll just come right out and admit it. Sharing mangoes or mango slushies is not something I tend to do. Sorry. But I did share the recipe? Baby steps, okay.
Bye.
Fresh Mango Slushies or Popsicles {Honey-Sweetened}
These fresh mango slushies are out of this world amazing. With their sweet, creamy texture and slight lemon tang, they are an ice cold treat that's delicious on a hot, summer day.
Ingredients
- 1 ripe mango peeled, cored and sliced
- 2 tablespoons (1.65 ounces) raw honey
- 1 ½ tablespoons fresh lemon juice from 1/2 lemon
- 2 to 3 fresh mint leaves optional
- 20 large ice cubes about 2 cups
Instructions
-
In a blender jar combine the mangoes, honey, fresh lemon juice and fresh mint leaves and blend until smooth and honey is dissolved.
-
Add ice cubes and blend until pureed. Add more ice, as desired to reach a slushie consistency. Taste and add more honey, if needed. Serve immediately or freeze into popsicles (see note).
Recipe Notes
1. I’ve also made this recipe with agave in place of the honey. agave has the benefit of dissolving a little easier than raw honey. You may need to use slightly more agave than honey to get it sweet enough.
2. The fresh lemon juice is a very important ingredient. I’ve made them a few times with lemon juice that’s been pre-squeezed or frozen and believe me, it’s just not the same.
3. I like to freeze these slushies into popsicle molds. If you don’t have popsicle molds, plastic cups with popsicle sticks work great too. I like to use the kind with plastic lids like for on-the-go salad dressings.
